Full extra salad

Salad are tipically summer dishes, particularly recommended for those who are on diet regime. They are rich in nutritional properties, provides an adequate amount of vitamins, minerals, fiber and don’t have fats.
All green leafe salads contain a lot of B vitamins, while the amount of C, PP vitamins and provitamin A varies depending on the type of salad: endive and chicory are particularly rich in precursors of A and C vitamins, less in lettuce and escarole. The salads also contain phosphorus, iron (particularly abundant in endivia), calcium (about 70 mg per 100 g of endivia).
